Fried Garlic

Makes 2 servings. 45 minute cook time.

Goes great with Potato "Risotto", Spicy Roasted Cauliflower and Smoked Green Olives.

ingredients

  • 1 head garlic

  • 1 tsp sugar

  • ¼ cup milk

  • 2 cups vegetable oil

preparation

  1. Peel garlic and shave very thinly (easiest using a mandolin)

  2. Place sliced garlic in a sauce pot with sugar and milk.

  3. Bring to simmer then remove from heat and let steep 30 minutes

  4. Strain garlic and dry on kitchen towel.

  5. In a medium pot, add vegetable oil and heat to 300 F.

  6. Add dried garlic and stir frequently until it begins to turn golden brown.

  7. Remove from oil onto paper towel and season with a bit of salt.
