Caesar Salad Dressing

Makes 2 servings. 5 minute cook time.

Goes great on a caesar salad, of course! Add some leftover roast chicken for some extra protein!


  • 2 tbsp olive oil

  • 2 tsp lemon zest (1 lemon should be enough)

  • 2 tbsp lemon juice, freshly squeezed from zested lemon

  • 1 garlic clove, grated (if you have some roasted garlic, use that)

  • 1 tsp dijon mustard

  • 1 anchovy, small, minced

  • 2 tbsp parmesan (grated)

  • 1 tsp pepper, freshly cracked

  • 1 egg yolk


  1. In a mason jar or other sealable container, combine all ingredients except egg yolk, close tightly and shake vigorously until well combined and contents have a creamy consistency.

  2. Just before serving, add egg yolk and shake vigorously again.
