Buns

Makes 18 rolls. 1 hour cook time.

These work great simply as dinner rolls with butter or try as hamburger buns.

ingredients

  • 500 g (2 cups) All Purpose Flour

  • 8 g (1 tbsp) instant yeast

  • 10 g (2 tsp) salt

  • 30 g (2 tbsp) sugar

  • 1 egg yolk

  • 30 ml (1 tbsp) oil

  • 300 g (1¼ cups) water (at 120°F / 49°C)

  • 3 tbsp sesame seeds or poppy seeds


Egg wash

  • 1 egg

  • 30 ml (1 tbsp) water

preparation

  1. Keep ¼ of the flour (125 g) aside in a bowl

  2. In another bowl, combine remaining flour, yeast, salt and sugar and make a well in the middle.

  3. Beat egg yolk in warm water and add oil.

  4. Pour egg yolk mixture into well and mix in the dry ingredients until a dough is formed. Transfer dough to your work surface.

  5. Knead the dough 10 minutes, adding the remaining flour as needed.

  6. Cover with plastic wrap and let rest 10-15 minutes (relaxes the gluten).

  7. Separate into 45g pieces and shape into rolls.

  8. Mix egg and water to make egg wash.

  9. Dip the presentation side of each roll in the egg wash then in sesame/poppy seeds.

  10. Arrange rolls on a parchment paper lined baking tray, 2 inches apart.

  11. Proof until doubled in size.

  12. Bake at 375° for about 20 minutes. Should be nice and golden brown.
